..from hope's kitchen...
Vegetable Rava Idli.. which is so easy to make and not much time consuming also.. in fact it's one of our favourite short cut dinner/lunch.. though people eat this in breakfast but for us the timings are little weird.. :P
Ingredients:
1 cup rava/suji
1/2 cup yogurt
1/2 cup finely diced capsicum/carrot/g.chillis/coriander leaves
one onion chopped
1/2 cup capsicum/carrot/beans finely cut into long pieces
1/4 tsp baking soda
salt/mango powder to taste
1/4 tsp mustard seeds
1 tbsp oil
Mix rava and yogurt well and keep it aside for 10 mins.. add diced vegetables and salt.. add little water if batter feels thick.. it should be of normal consistency.. add baking soda and mix.. grease the idli plates.. pour idli batter in plates.. and steam it for 12-15 mins..
In the mean time heat oil in a pan.. add mustard seeds.. then add onion.. fry it for one minute and add remaining vegetables.. saute them for sometime.. take out idlis and cut them into two or four(your wish) pieces.. and add them to sauteed vege's.. add little salt and mango powder to taste.. garnish it with coriander leaves and serve with coconut and green chutney..
A yummy food is ready..
P.S.. Boy enjoys it with expresso coffee.. *smiles*
